Recipe: Berry Coulis & Greek Yogurt
with mixed seeds roasted in Honey
1 bag of frozen strawberries
1 bag of frozen raspberries
150g sugar (We use brown demera)
Do not add any liquid. Boil the fruit from frozen, add the sugar and simmer for about 40 minutes.
Blend and put into old jam jars. (you can pass through a sieve to get rid of any pips if you wish)
Let the coulis cool
Pick out a nice glass and spoon in the coulis and tap tap the glass, then add the Greek yogurt,
tap tap gently, then add slices of banana, add another layer of coulis, then add your roasted seeds in honey.
Sprinkle icing sugar for presentation.
