Recipe: Berry Coulis & Greek Yogurt
with mixed seeds roasted in Honey

1 bag of frozen strawberries
1 bag of frozen raspberries
150g sugar (We use brown demera)

Do not add any liquid.  Boil the fruit from frozen, add the sugar and simmer for about 40 minutes.

Blend and put into old jam jars. (you can pass through a sieve to get rid of any pips if you wish)

Let the coulis cool

Pick out a nice glass and spoon in the coulis and tap tap the glass, then add the Greek yogurt,
tap tap gently, then add slices of banana, add another layer of coulis, then add your roasted seeds in honey.

Sprinkle icing sugar for presentation.

Coulis & Jam
Raspberry coulis is the red sauce that pastry chefs often use to decorate your dessert plate with swirls.

For the raspberry coulis, tip all of the coulis ingredients into a frying pan and heat until the raspberries start to
break down.

Transfer to a food processor and blend until smooth, then pass through a sieve to remove the pips.

Set aside until ready to serve with either a rich vanilla ice cream or a delicate cake.

  • A flawless fusion of flavors from the orient (fishcake and aromatic duck) with old school classics (gourmet burger and Guinness and beef stew). Super delicious and impeccable service. What's not to love? Will definitely return.

  • I ran a pub quiz in Murphy's last week and it was the perfect venue! The staff couldn't have been more helpful and even provided complimentary finger food on the night, a sound system and mic for the quizmaster and enabled us to display the scores on the TV screen! There was plenty of room for tons of participants, but it's nicely laid out so that no matter what number you have it would still feel full and cosy! Drinks were lovely too! I would definitely recommend it to anyone looking to do a fundraiser!
